Chef Gabe Calhoun
Gabe Calhoun is a California native that has been in New Mexico for over fifteen years. Ranching and farming have been in his family for generations and helped engrain the farm to table concept into his practices as a chef. He is a classically trained chef who has been in the restaurant business for over twenty years. He has a passion for fresh honest food and loves to cook. Gabe had a big part in helping start and run the successful multi-location restaurant Vinaigrette. After 9 years with Vinaigrette, he left to help start Pas De Cheval Horse rescue with his wife Erin. After just a short time, he couldn’t stay away from restaurants and started with Rio Chama moving up quickly to executive chef. He has a strong passion for fresh sustainable ingredients and local business and brings that to whatever kitchen he is in.
