Peter Knaus has been in the culinary industry for the past 13 years, in everything from brewpubs to fine dining. He has a passion for scratch made, local seasonal foods that he endeavors’ to serve whenever possible. He also has extensive knowledge of whole animal butchery, sausage, and charcuterie trained under Ryan Pera of Agricole Hospitably in Houston, TX. His personal culinary philosophy is good food makes you happy. While he can’t solve your problems he believes a great plate of food certainly can make it better; especially with a good pint!
