Evan is a 2003 graduate of the Culinary Institute of America in New York. His career has taken him to New Orleans, California, Oregon and, for the past four years, Santa Fe. Here he has been Chef de Cuisine at the Eldorado Hotel and Executive Chef at Quail Run. He comes to the Palace as an opportunity to reestablish fine dining in a Santa Fe institution. He brings a West Coast orientation to a New American menu with a touch of Northern New Mexican zest. Please come try Evan’s food. Ask for him when you come.
